Kids love watching Jonas teaching plant based recipes so easy that everyone can follow along! Try out this recipe for nacho cheese sauce made out of potatoes and carrots!

Potato Carrot Cheese Sauce

Dice and boil:
4 medium potatoes
4 medium carrots

Add to blender:
Boiled potatoes and carrots
1/2 cup water
1/3 cup oil
1 tablespoon lemon juice
1/2 cup nutritional yeast
1 tablespoon tahini
1/2 teaspoon black pepper
1 tablespoon seasoning salt
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
Jalapeño pepper (to taste)
Dash of cayenne powder
Dash of chili powder

Blend until smooth and use like cow cheese traditionally would be on nachos or macaroni noodles, in quesadillas, broccoli soup, or as a dip for veggies or soft pretzels.

Sometimes being a vegan mom means throwing together an epic brunch. Fried potatoes with coconut milk and parsley, lavender black pepper gravy, tofu scramble curried with five spice, field roast sausage, and toast on @vinmans_bakery bread with avocado
Jonas and I finally made it out to @kittitascafe to try their vegan option. We were delighted that they use @vinmans_bakery sour dough for the avocado toast!

Jonas and I toted these to CWU campus today for the giant (30ftx130ft) pride flag unfurling which took place as part of the community response to a hate crime occurring here last week.
